Asparagus is so elegant looking and so easy to prepare, vegan or otherwise. Here’s how to make my favorite, easy asparagus. This dish is perfect for your Thanksgiving table, in lieu of the typical green beans:

Ingredients:

  • 1 bunch of asparagus
  • 1 tbsp olive oil
  • 1 tbsp Suzie Q or that oh-so-heavenly truffle salt, or just regular ‘ol salt & pepper

Instructions:

  • Trim off about 1 inch of the tough stalk of the asparagus.
  • Wash ‘um up and pat dry.
  • Spread them out on a cookie sheet so they form a single layer.
  • Brush with olive oil and sprinkle on your seasoning.
  • Bake at 400 degrees for about 25 minutes or so depending upon how crispy you like them.
  • Dish & enjoy!
