Ingredients:

  • 3 cups gluten free oats
  • 1 1/3 cup mixed nuts
  • ½ cup unsweetened coconut shreds
  • ½ cup assorted dried fruits
  • 2 tbsp chia seeds
  • 1/3 cup honey
  • 1/3 cup melted coconut oil
  • ½ tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • ¼ tsp salt

Method:

Preheat oven to 350°F.  Mix ingredients in medium sized baking bowl. Line cookie sheet with parchment paper and spread granola evenly over it.

Bake 10-12 minutes, stirring half way through for even crispiness.  Let cool before serving.  Tastes great served with dairy free yogurt with honey drizzled on top!
