I like to leave these on my kitchen island and watch them disappear when my kids get home from school. Great healthful snack packed with fiber, antioxidants, iron, protein and vitamins. Super-easy to whip up too.
- 2 cans chickpeas aka garbanzo beans (rinsed and drained)
- 2 tbsp olive oil
- 1 tbsp curry powder
- ½ tsp cumin
- ½ tsp garlic powder
- ¼ tsp salt
- Preheat oven to 400°F.
- Mix ingredients in medium-sized bowl.
- Spread out in a single layer on a cookie sheet.
- Bake for 30 to 35 minutes until nice and crunchy.
Put them in a bowl on your kitchen counter and see what happens!
