I call these my “PMS Specials”. 🙂 You can even sprinkle a little sea salt on top of them while the chocolate is still melted. This way you satisfy most cravings in one bite. Super fast to make too, which also helps in those times of urgent need.
Prep time:
35 minutes (most of that is spent waiting in front of freezer for them to harden up and not burn the roof of your mouth when you eat them prematurely. Yep, speaking from experience here.)
Ingredients:
- 2 cups shredded, unsweetened coconut
- 4 tbsp brown rice syrup
- 12 raw almonds
- 5, 1-ounce vegan, semi sweet baker’s squares
Instructions:
1. Melt chocolate over medium heat in a double boiler.
2. Meanwhile, combine brown rice syrup and coconut in medium bowl. You may have to use your hands to mix it thoroughly, although beware it will be very sticky!
3. Form the coconut mixture into roughly 2-inch long ovals and place them on a plate covered with parchment paper.
4. Place an almond on each oval before covering with about one tablespoon of melted chocolate.
5. Store in freezer for about 20 mins or until chocolate hardens.
Makes about 12 almond joys.
