Welcome…
I’m Erin O’Bryan
My goal is to share my vegan, ranch experience (yes, it’s a bit of an oxymoron I know) and the recipes I create AND LIKE. Hopefully you like them too. And to share some of the wacky things that go down on the ranch. This city girl is constantly amazed, humbled and often grossed out. But determined to make a go of my new life. As my mother always said, “Nothing worth doin’ is ever easy, honey”. Ain’t that the truth?!
“Carne” Asada Tofu & Portobellos
I LOVE carne asada marinade. It's so citrus-y & spicy. And just because I don't eat carne doesn't mean I can't enjoy the marinade. I have to say it works on just about all veggies, but mushrooms and tofu are my current faves. Unlike meat, it just takes a short...
Award Winning, No Bull Chili
Maybe because it was St. Patrick's Day, and I'm more than a little Irish... Or maybe it was because the Universe was smiling on me that day... But whatever it was, a few years ago this chili recipe scored me a big win - First Place in the Red Chili Category at the...
Glorious Greens
My garden is overflowing with greens right now, lucky me! I've got chard, beet greens and 3 types of kale. I mix them all together in my biggest pan for a colorful dish packed full of nutrition. Here's what I do to bring out the best in my greens: Ingredients: 8 to 10...
Thai Almond Sauce
I love, adore and crave this sauce. I make a big batch and stash it in my fridge to pour over everything from brown rice to steamed veggies to tofu to salad to noodles to....well, everything! Ingredients: 1/2 cup almond butter, crunchy or smooth, your preference 1/3...
Liquid Apple Pie
This delicious tonic will soothe a tummy ache and kids especially love it. If you don't want the sugar, just drink it straight (skip the juice). Ingredients: 1 cup organic, unfiltered apple juice 1 tablespoon kuzu powder 1/2 teaspoon cinnamon 1 1/2 cups cold water...
Layered Bliss (Brown Rice, Greens, Ginger Butternut Squash Soup and Thai Almond Sauce)
I had a another cooking class at the ranch this weekend. I decided to make the class all about gut-healing foods and my go-to gal for all things gut-healing is Mee McCormick. She has a wonderful cookbook (My Kitchen Cure) that I always keep handy. My recipes included...
Easy Vegan – Mochi Brownies
These brownies are bomb baby! And very low sugar, low glycemic, high yumminess. I like to make these "bite sized" but feel free to cut them any size you like. Ingredients: 1 package chocolate brownie mochi (most health food stores carry it in their...
Easy Vegan Banana Bites
So easy, so sugar-free (except what mother nature put in the fruit). Best part is, they taste like banana ice cream! Ingredients: 4 ripe bananas 1 cup orange juice 1 cup unsweetened, shredded coconut Instructions: Slice a banana into 1/2" round pieces Dip each...
